For the Sauce:
⅓ C Smooth Peanut Butter
2 tbsp Soy Sauce
2 tbsp Hoisin Sauce
2 tbsp Sriracha Sauce
1 tbsp Grated Ginger
6 tbsp Hot Water (to thin)

For the Rolls:
12 Rounds Rice Paper
36-48 Peeled and Cooked Shrimp, Tails Removed (We used a Shrimp Ring)
1-2 Avocados, Sliced
3 C Shredded Carrot
3 C Shredded Red Cabbage
½ C Cilantro
24 Basil Leaves
24 Mint Leaves

1. Soak Rice Paper Wraps (1 at a time) in warm water to soften.

2. Place 3-4 Shrimp in the centre of the wrap.

3. Top with desired portion of each remaining ingredient.

4. Fold over the bottom, tuck in the sides, then roll the rice paper up (like a tortilla).

5. Whisk together all sauce ingredients in a small bowl, and serve on the side.

These were really good. We did 2-3 shrimp per roll and it wasn't quite enough. I think I'd go easy on the herbs, they are very flavourful and kind of take things over. A delicious, fresh snack or entire meal
