1 (10.5 oz) can condensed cream of potato soup
1 (10.5 oz) can condensed cream of mushroom soup
1/4 cup chopped white onion
1 Tbsp Dijon mustard
1/2 tsp black pepper
3 lbs Yukon gold potatoes, thinly sliced
12 oz shredded cheddar cheese

Directions:

1. Preheat oven to 350ºF. Grease a 9x13-inch baking dish.
2. Stir together soups, onion, mustard, and pepper in a bowl. Heat in microwave until hot, about two minutes.
3. Put 1/3 of potato slices in the prepared baking dish. Cover with 1/3 of soup mixture and one cup cheese. Repeat layers twice.
4. Bake, covered, one hour & 10 minutes. Uncover and bake until potatoes are fork tender and cheese is browned on top, 15 to 20 minutes more. Let stand 10 minutes before serving. Sprinkle with additional pepper.
