4 cups tapioca starch
1 cup milk
1 cup oil
1 cup water
3-5 eggs (the more eggs you use the more air pockets you will have)
2 cups of cheese (use the largest grate). I prefer 3/4 quesadilla cheese and 1/4 shredded Parmesan (grated does not taste as good)
1 ½ teaspoons salt

1. Boil milk, oil, water and salt in a pan until it rises (the boiling solution will rise up in the pan).
2. Immediately pour boiling solution over the tapioca starch and mix. This scalds the tapioca starch and helps it form the correct consistency.
3. Allow to completely cool
Turn oven on to 350ºF.
4. Once mixture is cool, lightly beat the eggs and add them to the mixture a little bit at a time until it forms a very wet/sticky dough (eggs are leavening agents, they will make your finished bread airy).
5. Mix in the cheese
6. Wash your hands, add oil and form the dough into balls (don't pack them too tightly)
7. Bake at 350ºF until cheese is a dark golden brown. About 36 minutes.
