4 lbs. firm ripe peaches
1 lb. sugar
5 Tbsps. quick cooking tapioca

Directions:
Directions:
Work with only 4 lbs. of peaches at one time. Scald fruit and skin then cut into half inch segments.
Place prepared fruit into saucepan with 3/4 of the sugar. Combine well to start the juice flowing, if necessary add about 1/3 cup water to prevent burning. Place over high heat and bring to a boil, boil for 1 minute. Stirring constantly. Add remaining sugar combined with tapioca, return to full boil, boil 1 minute, stirring constantly. Remove from heat, cool as quickly as possible. Fill cooled peach filling into freezer containers. Enough to make one pie. Leave 1/2 inch space.
When needed defrost , put in pie shell dab with lumps of butter and sprinkle with cinnamon. Top with pastry. Make slits on top crust for steam to escape ,brush with milk. Cook at 350º until golden brown, about 40 minutes.
