5 lbs.. peaches (about 15 med)
4 mild green chilies
1 1/2 cups white Spanish onion chopped
1 1/2 cups green pepper finely chopped
1 cup red pepper finely chopped
1 (156 ml. can) tomato paste
3 garlic cloves finely chopped
3/4 cup white vinegar
3 Tbsp. sugar
1 Tbsp. pickling salt
2 tsp. paprika
3 Tbsp. cilantro finely chopped

Directions:
Directions:
Blanch peaches (boil water add peach boil again remove to cold water)
Cut peach into 1/4
Scrape seeds from chilies and finely chopped
Add rest of the veggies and other ingredients
Bring to a boil simmer 1 hour add cilantro cook 15 minutes more
Process in hot bath 20 minutes for pints or 15 minutes for small
