Ingredients: Food Processor Pasta Machine For Dough: 5 eggs 1 cup of white wine 1 cup of oil -vegetable + olive oil Pinch of salt 4 cups of flour. + 1 more cup for later
1 egg for egg wash
Filling: 2 Medium containers of ricotta 2 cups Pecorino cheese 4 fresh eggs Pinch Pepper Finely Chopped Fresh Parsley

Directions:In a Food Processor , pour 4 cups of flour , add 5. Eggs , with wine and oil. Pulse and then spin until the dough forms a soft ball. Wrap in waxed paper and set aside .
Set up the pasta machine. The only attachment required is the flattening of the dough
Make the filling: Empty the 2 containers of the ricotta. Add the eggs one at a time and mix thoroughly. Then add the pecorino cheese and pepper and mix well. At the end add the finely chopped parsley and mix well. Sprinkle some pepper and mix.
To make pieces . It can be made into very large ravioli or long oblong ravioli shapes.
With pasta machine elongate the dough pieces as if you were making lasagna slices. Then add filling to half. Fold over and use ravioli cutter to zigzag on three sides. Save the discarded pieces to make another. Turn oven on to 375. Degrees. Place them on baking sheets lined with parchment paper.
In a small bowl whisk the egg . With pastry brush on the egg wash on each piece.
Bake for 50-55 minutes or until golden brown. Enjoy! |
