1 stick margarine
1 c chopped onions
1/4 c chopped celery
1/4 c chopped green onions
1/4 c parsley
1 lb crab meat
bread crumbs
1 tsp salt
1/2 tsp red pepper
1/4 tsp black pepper
1/2 c all purpose flour
13 oz evaporated milk
8 oz shredded Colby Monterrey jack cheese

Directions:
Directions:
Preheat oven to 350º.
Melt butter. Sauté vegetables.
Blend flour in well. Pour milk in gradually, stirring constantly.
When mixture thickens, add seasonings and cheese.
When cheese has melted, add crabmeat.
Pour into casserole dish or small ramekins which have been sprayed with Pam.
Top with additional cheese and breadcrumbs.
Bake for 20-30 minutes until cheese has melted and is brown around edges.
