4 slices thick bacon chopped
1 medium onion chopped about 1/2 a cup
2 cloves garlic finely chopped
1 box frozen spinach thawed and squeezed to drain.
1 egg
1/2 tsp dried thyme leaves
1 cup shredded Italian cheese blend (4oz)
6 boneless- skinless chicken breast ( about 4 oz each)
1/2 tsp pepper
2 tbsp olive oil or vegetable oil.

Hot cooked rice as a side dish to place chicken on or beside.

In a 12 in. skillet, cook the bacon till crisp. Remove bacon to a paper towel to drain off the fat. Crumble the bacon when cooled and drained.
Reserve the bacon fat that is in the skillet.
In the same skillet cook the onion and garlic 2-3 min stirring frequently till onion is tender do not brown. Remove from skillet and set aside.
In a medium bowl mix the spinach-egg-thyme and cheese.
Next stir in the onion mixture and bacon.

On the thick side of the chicken cut a 3in. long pocket to within a 1/4 in of the opposite side of the breast.
Spoon about 1/4 cup of the spinach mixture into the pocket of each breast. Sprinkle some pepper over the chicken or what ever seasoning of your liking.

In the same skillet heat oil over medium heat add the chicken breast; cook uncovered 8-10 min. turning once, until light brown on all sides. Reduce heat to low. Cover cook for 10- 20 min. longer turn if necessary until chicken is no longer pink in the center. 170º if using thermometer.
