Ingredients: 1 cup long-grain rice 1 tablespoon canola oil 1 lb. ground pork 2 cloves of garlic finely chopped 1 small hot red pepper (can use red pepper flakes to taste) 2 tablespoons grated ginger 2 tablespoons soy sauce 4 tablespoons fresh line juice 1 teaspoon brown sugar 1 English cucumber, thinly sliced 2 scallions, thinly sliced 1 cup fresh cilantro 1/2 cup fresh mint

Directions:Cook rice according to package instructions Heat oil in a large frying pan and add pork. Cook breaking it up with a spoon until brown and crispy (6 to 8 minutes). Add garlic, chili and 1½ tablespoon of ginger. Cook for about 1 minute. Remove from heat and add 1 tablespoon soya sauce and 2 tablespoons lime juice. Can add ¼ cup water if the mixture seems very dry. In a large bowl whisk together the brown sugar and the remaining ginger, soy sauce, and lime juice. Add cucumbers and scallions and toss to coat. Fold in mint and cilantro. Serve the pork over rice with the cucumber salad on the side. |
