1/2 medium yellow onion
2 garlic cloves
1 tsp olive oil
1 pound of chicken chopped up ( I use chicken breast or chicken strips).
8 cups chicken broth
5 medium red potatoes unpeeled but diced about 2 1/2 cups
4 to 6 carrots diced up
1 cup broccoli cut up
2-3 cups baby spinach
Kosher salt and pepper to your liking
Shaved Parmesan Cheese to add to your bowl right before eating.

Directions:
Use a medium size soup pot.

Add oil in pan to cook onion till soft not brown.
Next add the garlic and the cut up chicken and season with the salt and pepper. cook 3-4 min
Next add the Broth- potatoes and carrots and bring to a boil. Cook till semi tender and more salt if needed.

Next add the broccoli cook 2-3 min. don't let them get mushy. last add the baby spinach till its wilted. Remove from heat and serve.

Don"t forget to sprinkle the Parmesan cheese.
