3 pounds bone-in skinless chicken thighs
2 teaspoons ground cumin
salt
freshly ground black pepper
1 teaspoon paprika (or 1/2 teaspoon chopped chipotle chiles in adobo sauce)
1/2 teaspoon ground allspice
1 cup chicken broth
1/2 cup salsa
3 gloves garlic, crushed
2 cans black beans, rinsed and drained
2 pounds sweet potatoes, peeled and cut into 2 inch chunks
1 cup roasted red peppers, cut into strips
1/3 cup loosely packed fresh cilantro leaves

Directions:
Directions:
Sprinkle chicken thighs with 1/2 teaspoon ground cumin, salt and pepper. Use saute function, cook chicken thighs for 10 minutes or until well browned on all sides. Remove to a plate.
Combine paprika, allspice, chicken broth, salsa, garlic, and remaining 1 1/2 teaspoons of cumin, along with the beans and sweet potatoes.
Place chicken on top of potato mixture and spoon liquid over the chicken. Slow cook on high for four hours (or low for eight hours).
Remove chicken piece to large platter. Stir roasted red peppers into potato mixture. Spoon mixture over chicken and sprinkle with cilantro and serve with lime wedges.
