600 g Butternut pumpkin
1 Red onion
1/2 bunch Thyme, fresh
1 Egg
1 Pepper
1 Salt
1 tbsp Olive oil
10 sheets Filo pastry
60 g Butter
1/2 cup Parmesan, grated
1/2 cup Sour cream

Directions:

1. Preheat oven to 200°c.

2. Place pumpkin onto a lined baking tray in a single layer. Drizzle with half of the oil and season. Bake for 30 minutes or until tender.

3. Brush pastry with butter and layer on top of each other on a baking tray, folding in edges. Whisk sour cream with egg in a bowl and stir in parmesan.

3. Spread over pastry. Top with pumpkin, onion and thyme. Drizzle with remaining oil and bake for 15-20 minutes or until golden. Serve.
