Blueberry Muffins Recipe

½ c margarine, softened
1 c sugar
2 eggs
2 c flour
2 t baking powder
½ t salt
½ c milk
1 t vanilla
2 c blueberries

Directions:
Directions:
Add margarine and sugar until creamy. Add eggs, beating well after each. Combine flour, baking powder and salt. Add alternately to sugar mixture with milk and vanilla. Fold in blueberries (I use either fresh, canned or frozen berries that have been thawed). Spoon into muffin pans lined with papers. Sprinkle tops with sugar. Bake 30 minutes at 375º. Cool on wire rack.
