3 28oz cans peach slices or halves in heavy syrup
4 Tbsp rice vinegar
4 sticks cinnamon
2" piece fresh ginger, peel and slice into thin rounds
2 tsp crushed red pepper flakes
2 tsp kosher salt
2 tsp whole black peppercorns
6 whole cloves

Directions:
Directions:
Drain peaches in colander over medium saucepan.
Set fruit aside
Add remaining ingredients to juice in pan and bring to a boil for 2 minutes.
Turn off heat and gently fold in reserved peaches.
Let sit for 1 hour.
Bring back to a boil.
Immediately ladle hot fruit into 6 pint canning jars.
Fill with reserved syrup.
Wipe rims and seal.
No need to process.
Serve with ham, pork or poultry.
Refrigerate jar once opened.
