2 t. EVOO
4 chicken breasts
Salt and Pepper
1/2 cup diced carrots
4 T. sliced shallots
2 t. chopped fresh thyme
4 chopped garlic cloves
1/2 c. dry white wine
2/3 c. chicken stock
1 T. butter
2 t. Dijon mustard

Directions:
Preheat oven to 425º.

Heat a large ovenproof skillet over medium-high heat. Add oil. Sprinkle chicken with salt and pepper, add to pan;cook 5 minutes. Turn chicken; place pan in oven. Bake for 7 minutes or until done. Remove chicken from pan and keep warm.

Return pan to medium-high heat. Add carrots, shallots, thyme and garlic to pan; sauce 2 minutes. Add wine to pan; cook 2 minutes or until liquid is reduced by half, scraping pan to loosen browned bits. Add stock to pan; cook 2 minutes til slightly thickened. Stir in butter and Dijon mustard. Serve over chicken.
