4 lb chicken on the bone - I still use breasts
Flour for dredging
3 Tbsp Olive oil
1 cup minced celery (I omit)
1 cup minced carrot
2 cloves garlic, minced
1 tsp oregano
1 cup demi-glaze or Knorr brown sauce from package
1 cup crushed tomatoes
1½ cup white wine
1 lemons rind grated fine
1 bay leaf
1 Tbsp chicken base ( I use Better Than)

Directions:
Directions:
1. Dredge chicken in flour.

2. Brown in olive oil on either side.

3. Add onion, carrot, celery, garlic, oregano, Demi glaze, tomatoes, wine, bay leaf and chicken base.

4. Bring to boil and simmer about one hour.

5. Remove chicken to platter.

6. Bring sauce back to a boil and lemon rind. Season with salt and pepper and lemon. Check color and consistency.


Check color 0 can add ½ cup Gravymaster
Check consistency: Corn starch and water.
