2 boneless chicken breasts, pounded
Flour to dredge
Oil to Sauté
3 oz white wine
2 lemons, juiced
2 oz salted butter
salt
pepper
capers to garnish

Directions:
Directions:
1. Dip breasts in flour, then sauté gently, browning gradually on each side while cooking through. Do not burn.

2. Take out drippings if you have too much. Add white wine to pan. Simmer, shaking gently and reduce.

3. Add lemon juice, bring to a simmer.

4. Add butter and simmer until slightly thickened.

5. Taste sauce for seasoning and chicken and turn.

6. Transfer chicken to serving platter. Pour sauce over and sprinkle with capers.
