1 pkg skinless smoked sausage (sliced) like Eckrich sausage (I use Eckrich turkey smoked sausage)
8 Yukon gold potatoes, scrubbed and quartered
1 green pepper , diced
1 yellow pepper, diced

2 tbsp butter, cut into small cubes
2 tsp olive oil

1 tsp oregano
1 tsp basil
1/2 t black pepper

Directions:
Directions:
Preheat oven to 375º. Line a baking pan with aluminum foil.

In the prepared pan, arrange sausage, potatoes, and peppers in a single layer; place butter cubes over the top; drizzle with olive oil; sprinkle seasonings on top.

Bake covered with aluminum foil 40-50 minutes.

NOTE: You can change up the ingredient to your personal tastes with carrots, onion, zucchini, broccoli, or ham and perhaps a little cheese on top.
