1 C Fresh Ricotta
1/3 C Confectioner's Sugar, plus more for sprinling
4 - 5 inch purchased Cannoli shells


FOR TROPICAL RUM FILLING:

Fold 2 Tbs Pineapple jam; 2 Tbs Golden Raisins, chopped; 2 tsp Rum; and 1/4 tsp ground Allspice into Ricotta cheese. Garnish filled cannoli with toasted sweetened shredded coconut and chopped dried Papaya.

FOR ZESTY FRUIT & NUTS:

Fold 1/4 C chopped, dried Cranberries, 1 tsp Orange Zest, and 1/2 tsp Vanilla Extract into ricotta cheese. Garnish filled cannoli with chopped, roasted and salted Pistachios.

FOR DARK CHERRY-CHOCOLATE:

Fold 1/4 C drained Luxardo Cherries, chopped and 1/4 C finely chopped dark chocolate into ricotta mixture. Garnish filled cannoli with grated Dark Chocolate.

FOR SPIKED LEMON:

Fold 2 Tbs Limoncello liqueur into ricotta mixture. Garnish filled cannoli with Lemon Zest.

FOR MOCHACCINO SUNDAE:

Dip ends of cannoli shells in melted chocolate; let set. Fold 1 tsp unsweetened cocoa powder and 1/4 tsp instant expresso powder into ricotta mixture. Garnish filled cannoli with chopped maraschino cherries, patted dry.

FOR PUMPKIN-PEPITA CRUNCH:

Fold 1/2 C canned pure pumopkin and 1/2 tsp pumpkin pie spice into ricotta mixture. Garnish filled cannoli with salted roasted pepitas.
