2 cups flour
1 cup sugar
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 cup shortening
1 cup mashed ripe bananas
2 eggs
1/2 cup chopped walnuts, optional

Directions:
Directions:
Preheat oven to 350º. Prepare a 9 x 5 loaf pan with spray on the bottom only.

Combine the shortening, sugar, bananas. add eggs. Stir in the dry ingredients except for the walnuts. Bend well at medium speed. Stir in the walnuts. Pour into the prepared pan.

Bake 350º for 65-70 minutes. Remove from pan; cool completely before slicing.
