12 eggs
2 cup shredded cheddar cheese
1 1/2 cup milk
3 Tbsp diced onion
2 cup cubed ham
OR
1 lb. regular sausage & 1 lb. spicy sausage
1/2 tsp pepper
1/8 tsp cayenne pepper
30 oz. frozen shredded hash browns, thawed
thinly sliced colored peppers for on top

Directions:
Directions:
In large bowl combine eggs, milk, salt, pepper and cayenne. Stir in potatoes, cheese, onions and COOKED meat.
Pour into greased 9 x 13 pan or larger (maybe 2 9 x 9 greased pans)
Arrange peppers on top.
Bake uncovered at 350* for at least an hour, or until knife inserted near the center comes out clean.
