8 eggs, separated
¾ cup potato starch
¼ cup strong coffee
1 cup sugar
1 cup cocoa
¼ tsp. salt
Directions:
Directions:
Beat the egg whites together with ½ cup sugar until stiff. In a separate bowl, mix the potato starch and cocoa well. In a third bowl, beat the egg yolks, then add ½ cup sugar, coffee, and salt. Add the potato starch and cocoa mixture and mix well. Fold in the egg whites. Bake in a tube pan (Guglehupf) for 1 hour at 165 C. Invert pan on the neck of a bottle until cool.
