3 beets, peeled
2 T. potato starch
2 T. honey or sugar
1 cup orange juice
the juice of one lemon

Directions:
Directions:
Mix the potato starch, honey, orange juice and lemon juice together in a small pot. Cook until thick and clear, stirring constantly so as not to burn. If the beets are young and fresh, you don’t need to cook them. If they are larger or older, you need to cook them first until they are soft. Slice beets thinly and mix them in. Serve them hot or cold. Delicious!
