3 eggs
½ cup water
½ cup potato starch

Directions:
Directions:
Beat the eggs with a fork or whisk. Add the potato starch and water and beat again until smooth. Using a paper towel, oil a frying pan well. Heat the pan and pour batter into it as thinly as possible. Fry on both sides. Turn out on a paper towel to soak up any extra oil. It takes some practice, but you will get it! After you are finished, take each one, roll it up and slice it thinly so that you get noodles. Add them to the soup when you serve it.
