Mama's Chicken Enchiladas Recipe

8 - 6 inch tortillas
½ C. chopped onion
4 cloves garlic, minced
¼ tsp pepper
2 T butter
3 T all-purpose flour
1 - 8oz sour cream
2 C chicken broth
1 C shredded Monterey Jack cheese (4 oz)
2 C cooked shredded chicken
Directions:
Directions:
In a pan cook onion, garlic, pepper and butter until tender.
Stir flour into the sour cream, then add to the onion mixture.
Stir in the broth. Cook and stir until thick and bubbly.
Remove from the heat; stir in ½C of the cheese.

Stir ½C or more sauce into the chicken. Mix well Put about ¼C of cheesy chicken mixture
onto each tortilla. Roll them up, place seam side down in sprayed baking pan. Top with
remaining sauce. Bake covered at 350ºF about 35 minutes.
Sprinkle with remaining cheese uncovered about 5 minutes. Let stand 10 minutes
