2½-3 cups of cold cooked black rice (made from 1 cup of rice boiled in 2 cups of water)
1 cup fresh chopped cilantro
1 red-skinned apple, cut into ½ inch dice
⅓ cup chopped dry roasted peanuts
1 cup thawed frozen peas
3 scallions, thinly sliced
10 snow peas, cut in half diagonally

The Dressing
3 T fresh lemon juice and zest
2 tsp minced gingerroot
2 garlic cloves, minced
2 T curry powder
½ tsp sea salt

Fresh ground pepper
⅓-½ cup of olive oil depending on how much rice you have.

Directions:
Directions:
1. Combine the rice, apple, peanuts, peas, scallions, and snow peas in a large bowl and toss well.
2. Combine all the dresing ingredients in a jar with a tight fitting lid and shake vigorously. Pour the dressing on the salad and toss to coat well. Chill at least 1 hour or up to 8 hours, then bring to room temperature before serving.

This is a great side dish with fish and can also be a main dish with added chopped chicken. Sometimes I add chopped dried cherries or pomegranate seeds for a little more sweetness. Not too much though :)
