Leftover pot roast with gravy
4 potato rolls
4 slices cheese (Swiss or Cheddar)
Mayonnaise
Hot sauce or Coleman's Mustard
Salt and pepper
Sautéed spinach or broccoli rabe (optional)

Directions:
Directions:
Reheat the pot roast with a little of the gravy in the microwave until hot. Shred the pot roast with two forks. Place a slice (or two) of the cheese on the bottom of the roll. Mound 3-4 ounces of pot roast on the cheese. Season with salt and pepper then top with hot sauce and mayo. Serve with chips and sweet pickles.

Gigi's never been big on leftovers but she loves this sandwich. The good thing about leftover pot roast is that it takes well to reheating and is maybe even better the second day. This is so easy and rivals any pulled pork sandwich you could make or buy. Try leaving out the cheese or mayo and substitute sautéed spinach or broccoli rabe. Dip the buns in the gravy and pile on the beef for a D'Amour version of a French Dip. Instead of the hot sauce, spread a little Coleman's Mustard on the beef to wake up your buds. Even at my age, I like my buds awake.
