1 lb. scallops, cut in quarters
1 T. butter
1 T. finely chopped onion or shallots
2 T. white or red wine vinegar
1 C heavy cream
1 T prepared mustard
1 T finely chopped parsley
Salt to taste

Directions:
Directions:
Saute onions in butter
Add vinegar
Cook until almost all vinegar is evaporated
Add cream and cook down over high heat until reduced by half.
Add the scallops and salt.
Cook, shaking the skillet so the scallops cook evenly - about 1 minute.
Remove from heat and swirl in the mustard.

Sprinkle with parsley and serve.
