3 c. dry lentils
7 c. water (may need to add more during cooking)
2 tsp. salt
6-8 medium cloves garlic, crushed
2 c. chopped onion
2 stalks celery, chopped
2 medium carrots, chopped or sliced
1 tsp. basil
½ tsp. thyme
½ tsp. oregano
ground black pepper to taste
2-3 ripe tomatoes or 15 oz. can peeled tomatoes
2-3 c. chopped spinach, kale or collard greens (optional)
2 c. chopped ham or corned beef (optional)
Red wine vinegar to drizzle on top

Directions:
Directions:
Place lentils, water, salt in large pot. Bring to boil, lower heat and simmer, partially covered for 20-30 minutes.

Add garlic, onion, celery, carrots, herbs and pepper. Partially cover and simmer another 20-30 minutes. Stir occasionally.

Add tomatoes, greens, and meat. Add more water if needed. Cook another 15 minutes.

Serve hot with a drizzle of vinegar on top of each bowl
