3 lbs Beef Chuck Roast
2 canned chipotles in adobo sauce (I use the whole can)
1 cup beef broth
1 Tbsp garlic powder
1 Tbsp cumin
1 Tbsp oregano
1 tsp salt
1 tsp pepper
1/4 tsp ground cloves
1/4 cup fresh squeezed lime juice
2 bay leaves

Directions:

1. Brown chuck roast on both sides.

2. Add chipotles in adobo sauce, garlic powder, cumin, oregano, salt, pepper, cloves, beef broth and lime juice to the blender. Blend until smooth.

3. Add the browned roast to either the instant pot or the crock pot. Cover it with the sauce.

4. If cooking in the crock pot, cook on low for 8-10 hours.
If cooking in the instant pot, cook on high pressure for 55 minutes and natural release for 10 minutes.

4. Shred and enjoy!

I have made this both in the instant pot and the crock pot, and I prefer the texture from the crock pot. It has good flavors, but you might have to have some sour cream or avocado with it to neutralize some of the spice.
