⅓ cup pumpkin puree
¼ cup pure maple syrup
1 T water
¼ cup coconut oil, melted
3 pasture raised eggs, whisked
1 tsp vanilla extract
¼ cup coconut flour
½ tsp cinnamon
¼ tsp nutmeg
⅛ tsp ground cloves
⅛ tsp powdered ginger
½ tsp baking soda
½ tsp baking powder
pinch of sea salt
½ cup Enjoy Life Mini Chocolate Chips

Directions:

1. Preheat oven to 350º
2. Mix together wet ingredients in a bowl: pumpkin puree through vanilla extract.
3. In another bowl, which together flour, cinnamon, nutmeg, ground cloves, baking powder, baking soda, and salt.
4. Pour dry ingredients into wet ingredients and mix well.
5. Fold in chocolate chips.
6. Use an ice cream scoop to scoop batter into muffin liners.
7. Bake for 35-40 minutes.
