1 pound pea beans
3 onions, cut in half
1/4 cup bacon fat
1+1/2 " piece of salt pork, cut in two
1/2 box brown sugar
a little salt
enough water to cover all

Directions:
Directions:
Soak pea beans overnight

Preheat oven to 450º

Boil covered in fresh water, until they crack. Watch carefully so water does not boil out

Place onions, bacon fat, salt pork, sugar & salt into baking pot then cover with beans & water.

Bake in oven for 2+1/2 - 3 hours
