Filling: (Mom always doubled this)
1 cup raisins
1/2 cup sugar
1/2 cup water
1 tsp flour
juice pf one lemon

Batter:
1 cup sugar
1/2 cup shortening
1 egg
1 tsp soda
1/2 cup milk
3+1/2 cup flour
2 tsp cream of tartar

Directions:
Directions:
Preheat oven to 350º

Mix all filling ingredients & cook in a double boiler until thick. Set aside

Mix all batter ingredients into a dough.

Roll thin & cut into 2" circles

Place cookies on a cookie sheet. Place 1 tsp of filling in center of each then cover with another circle

Bake until light brown
