3 TB butter
3 cups apples - thinly sliced
1/3 cup raisins
2/3 cup firmly packed brown sugar
1+1/3 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
2/3 cup firmly packed brown sugar
1/3 cup SPRY
2 unbeaten egg yolks
1 tsp vanilla
2/3 cup ecaporated milk
2 egg whites

Heavy 10" iron skillet

Directions:
Directions:
Preheat oven to 350º

Melt butter in skillet. Remove from heat; add 2/3 cup brown sugar. Arrange apples in a decorative layer in skillet; add raisins

Sift together flour,baking powder & salt then set aside

Gradually add sugar & brown sugar to SPRY & cream well.

Blend in egg yolks & vanilla to SPRY mixture.Mix well

Add dry ingredients to mixture, alternating with milk.Blend thoroughly after each addition.

Beat egg whites until stiff peaks form. Fold into batter.

Pour batter over apples & raisins in skillet

Place skillet in preheated oven & bake 35 - 40 minutes.

Turn out immediately on a serving dish & serve warm
