2 T. olive oil divided
1 pkg. (2 cups) shredded hash brown potatoes
4 green onions, sliced
1 c. ham or corned beef
1 c. shredded pepper jack cheese
4-6 large eggs
salt & pepper to taste

Directions:
Directions:
Preheat oven to 400º. Heat 1 T. olive oil in large cast iron skillet. Add shredded potatoes and white portions of the green onions. Cook 6-10 minutes. Add remaining 1 T. olive oil to pan. Carefully flip potatoes in sections. Add ham and stir lightly. Cook 6-10 minutes. Turn potatoes again. Top with ¾ cup cheese. Return to oven so it will melt. Remove pan from heat. Make shallow wells in the potato/ham mixture for the number of eggs you are cooking. Break an egg into each well. Season with salt and pepper. Place pan back in the oven and bake until egg whites set, about 7-10 minutes. Top with remaining green onions and cheese. When cheese is melted, serve immediately.
