3 ¼ cup lukewarm water
1 ½ tbsp dry active yeast or 1 packet
6 ½ cups bread flour
½ tsp salt

Directions:
Directions:
Combine water and yeast and stir until dissolved. Add flour and salt and mix until thoroughly combined. Cover with a kitchen towel and let rise for two hours.

Dust lightly with flour and divide dough in half. Shape into two round loaves. You can store dough for up to two weeks in the refrigerator. Apply another dusting of flour and make three slashes across top, using a serrated knife. Cover with towel again and let rise another 40 minutes.

Preheat a baking stone on the center rack and a cast iron skillet on the lower rack, under the stone at 450 º.

Place dough on hot baking stone and quickly pour 2 cups hot water into skillet and quickly shut oven. The water will steam the bread to make the crust crispy. Bake for about 30 minutes.

Allow to cool completely before storing so that it doesn’t sweat inside the container. I have made this with garlic powder and cheddar added to the dough and it was amazing.
