1 # penne
1/4 # thinly sliced prosciutto
1/2 cup butter
1 large sweet onion, thinly sliced
1/2 cup chicken stock
Grated zest of 1 lemon
Generous pinch of nutmeg
Freshly ground pepper
Generous handful of fresh flat leave parsley, coarsly chopped
5 fresh sage leaves, chopped
1 cup grated parmesan cheese

Bring pot of water to boil, generously salt, add pasta, cook until al dente 10-12 min

Meanwhile trim prosciutto of excess fat and cut into narrow strips

In a large frying pan over medium low heat melt butter. Add the onion and saute until soft, about 4 min, add stock and simmer about 1 min

Drain pasta put in a warmed large shallow bowl, add prosciutto, lemon zest, nutmeg, pepper to taste, chopped parsley, and sage. Por on the stock mixture and toss well. Add 3 tbls cheese and toss again

Serve immediatly, pass remaining cheese at table
