Preheat oven to 350º

1 c. sugar
1/4 c. shortening
1 egg, slightly beaten
1 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
2 cups shredded tart, peeled apples
1/4 tsp. cup chopped walnuts (optional)

Vanilla sauce:
1 c. sugar
2 T. cornstarch
1/2 c. light cream (or evaporated milk)

1 T. butter
1 ½ tsp. vanilla

Cake:
Cream sugar and shortening together. Add egg and mix well. Add the dry ingredients; mix well. Fold in the apples and walnuts. Spread in a greased 8" square baking dish.

Bake at 350º for 35-40 minutes or until cake tests done.

Sauce:
Combine sugar, cornstarch, and cream in a saucepan. Bring to a boil over medium heat; boil for 2 minutes. Remove from heat and add butter and vanilla; stir or whisk until butter is melted. Serve warm over warm cake.
