3/4 cup sugar
2 TB cornstarch
1/8 tsp salt
2/3 cup water
1 egg yolk
1 tsp grated lemon rind
3 TB lemon juice
1 TB butter

Directions:
Directions:
in a saucepan, mix together sugar, cornstarch, & salt

Gradually stir in water

Bring to boil over direct heat, stirring constantly. Boil one minute

Add hot mixture into slightly beaten egg yolk then add back into hot mixture & cook 1 minute, stirring constantly.

Remove from heat.

Stir in lemon rind, juice & butter

Cool before spreading on cake.
