2 eggs
1 cup milk
1 TB melted butter
1 cup SIFTED flour
1/2 tsp salt

Directions:

Preheat oven to 425º

Generously butter eight 5oz custard cups & place in jelly roll pan

Beat eggs in a medium bowl until frothy.

Stir in milk & melted butter; beat until blended.

Beat in flour & salt until batter is smooth.

Ladle into prepared cuos, filling about half full

Bake for 35 minutes

Cut slit in side of each popover to allow steam to escape.

Return to oven & bake 5 minutes longer or until popovers are deep brown & very crisp

Serve with butter & jelly
