2 ears fresh Florida corn
2 eggs, separated
1/4 cup flour
1 tsp onion powder
3/4 tsp salt
1/2 tsp baking powder
1/16 tsp nutmeg

Directions:
Remove husks & silk from corn. Cut kernals off cobs making about 1+1/3 cups corn

In medium bowl combine kernals with egg yolks & mix well

Combine flour, powders, salt & nutmeg & stir into corn mixture.

Beat egg whites until stiff, but not dry.

Gently fold whites into corn mixture

Drop by teaspoons into deep fat preheated to 350º.

Cool until golden - about 3 minutes, turning once.

Drain on paper towels & serve immediately
