2+1/4 cup sifted CAKE flour
1+1/2 cup sugar
1 TB baking powder
1 tsp salt
1/2 cup salad oil
6 eggs, separated
3/4 cup COLD water
2 tsp fresh lemon juice
1 tsp lemon rind
1/2 tsp cream of tartar


FROSTING:

1/4 cup butter
4 cups siftedpowdered sugar
dash of salt
2 TB lemon juice
2 tsp lemon rind

Directions:
Directions:
Preheat oven to 325º

Sift together f;lour, sugar, baking powder & salt together in a bowl.

Make a well & add in this order: oil, egg yolks, water, lemon juice & rind.Beat with a spoon until smooth.

Add cream of tartar to egg whites & beat until very, very stiff.

Pou egg yolk mixture gradually over whipped egg whites, carefully folding with a rubber spatula just until blended.DO NOT STIR

Pour immediately into 10" tube pan.

Bake for 70 minutes or until top springs back when lightly touched

After removing cake from oven, turn pan upside down, placing over the neck of a small funnel.

When cold, loosen sides with spatula & remove from pan.

Make Lemon Frosting by creaming butter, salt & half of the sugar. Cream well then add lemon juice & 1 tsp rind alternately with the rest of the sugar. Cream until light & fluffy

Frost cooled cake with frosting & garnish with the rest of the lemon rind
