3 -4 large sweet potatoes
1/2 c sugar
1/2 c brown sugar
1/4 c melted butter
2 eggs
1 c milk
1 vanilla bean scraped
1 Tbsp + 1 tsp bourbon
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
9" pie shell

Directions:
Directions:
Preheat oven to 350º. Prepare pie crust in pan. Set aside. Peel potatoes and cut into chunks. Place in pot of boiling water and boil for 20-25 minutes or until fork tender. Drain potatoes well. Process in food processor until completely smooth. You should have 2 1/2 c of puree. In a large bowl with a wire whisk combine puree, sugars, butter, eggs, milk, vanilla seeds, bourbon, salt and spices. Pour filling into crush. Bake 50-60 minutes or until pie is set and knife inserted near center comes out clean. Serve with whipped cream.
