9" baked pastry shell, cooled
3 eggs, separated
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk
(NOT evaporated milk!!)
1/2 cup ReaLime Lime Juice from concentrate
few drops green food coloring (optional)
1/2 tsp cream of tartar
1/3 cup sugar

Preheat oven to 350º

In medium bowl, beat egg yolks.

Stir in Eagle Brand, lime juice & food coloring if usung.

Turn into shell

In small bowl beat egg whites & cream of tartar until soft peaks form; gradually add sugar until stiff but not dry.

Spread on top of filling, taking care to seal around the edge

Bake 12 to 15 minutes or until golden brown. Chill before serving

** for a lighter filling, fold in half the stiff egg whites into filling mixture before placing into crust***
