1 (3 to 4lb) boneless beef roast
2 Tbsp. olive oil
2 cups of thinly sliced onions
1 can tomato sauce
2 garlic cloves
1 bay leave crumbled
1 tsp. each sugar, dried oregano and thyme
4 large celery stalks, chopped
4 medium carrots cut into 1 inch pieces
4 medium potatoes cut into quarters

Directions:
Directions:
In a large Dutch oven, brown Beef in hot oil; remove. Sauté onions in dripping until tender.
Stir in sauce and spices, return beef and add vegetables to tomato mixture. Bring to a boil, reduce heat, simmer covered for about 2 hours.
