For the Beef:

1 1/4 lbs thinkly sliced beef such as sirloing or flank steak
1/4 c soy sauce
2 T Brown Sugar
3 cloves minced garlic
2 tsp. minced fresh ginger
1/2 tsp. red chile flakes
salt & pepper to taste
2 tsp. vegetable oil

For the Slaw:

2 c. shredded cabbage
1 c. shredded purple cabbage
1 Tbs lime juice
1 Tbs olive oil
1/4 c. thinly sliced green onions.
Salt & Pepper to taste

For the pickled cucumbers:

1 cup very thinly sliced cucumbers
2 Tbs. rice vinegar
1/2 tsp sugar
salt to taste

8 small soft flour tortillas

Directions:
Directions:
1) in a resealable bag combine the soy sauce, brown sugar, garlic, ginger, chile flakes and salt and pepper. Add beef, seal the bag, and shake to coat the meat in the marinade. Marinate for at least 15 min or up to 2 hours.

2) in a small bowl, combine the cucumbers, rice vinegar, sugar and salt. Cover and refrigerate for at least 15 min or up to 4 hours.

3) Heat the vegetable oil in a large pan over high heat. Add the beef in a single layer and cook for 4-5 minutes until it is cooked through and starting to brown.

4) While beef is cooking, make the slaw. In a med bowl, combine the cabbages, carrots, lime juice, olive oil and green onions. Toss until thoroughly mixed. Season with salt & pepper.

5) To assemble: fill each tortilla with approx1/4 cup slaw and then evenly divide the beef over the tortillas, Top each taco with approx. 2 Tbls of pickled cucumbers .
