Ingredients: For The Dressing: 1 Avocado ½ Cup Cilantro ½ Cup Water (to thing) ¼ C Greek Yogurt 4 tbsp Fresh Lime Juice 4 Cloves Garlic 1 tsp Hot Sauce 2 tbsp Lime Zest Kosher Salt and Black Pepper To Taste
For The Chicken: 3-4 Boneless, Skinless Chicken Breasts 1-2 tbsp Olive Oil Jamaican Jerk Seasoning (or Sauce)
For The Salad: 1 Head Romaine Lettuce 1 Can Corn Niblets ½ Pineapple, Trimmed, Cored, and Diced (canned Pineapple would work here) 2 Cups Grape Tomatoes, Diced 1 Cup Radish, Sliced Thinly ½ Red Onion, Sliced Thinly 1 Red Pepper, Sliced Thinly 1 English Cucumber, Halved and Sliced

Directions:1. Combine Dressing ingredients in a blender and pulse to combine. Season with Salt and Pepper to taste. Add Lime Zest right before serving
2. On the BBQ or in a grill pan, grill the chicken until cooked through. Alternatively, cut the chicken into cubes and cook in a non-stick skillet with olive oil until cooked through. Add the Jerk seasoning or sauce, and toss to combine.
3. Wash and Dry the Romaine lettuce, chop into small pieces, and add it to your serving plates.
4. Like a traditional Cobb salad, add the remaining salad ingredients and grilled chicken to separate sections of the salad plate. Alternatively, add all ingredients to a large bowl and toss.
5. Top with Dressing and Serve |

Notes: Made this on March 31st, and had leftovers for the following day. We cooked the chicken in cubes and added "Cool Runnings" brand Jerk seasoning. This is a much sweeter, less spicy version of the recipe than if you used Jerk Chicken sauce. Jerk is generally fairly spicy so those who don't love spice (MOM), you may want to just try a regular bbq rub or sauce. We both thoroughly enjoyed this, although I could have gone spicier.
