2 pounds potatoes (about 5-6 medium size) peeled and cut into 1/2-3/4 inch chunks
1 cup mayonnaise
2 tablespoons vinegar
1 1/2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon pepper
1 cup celery, small dice
1/2 cup onion, small dice
2 (or more) hard boiled eggs, chopped

Directions:
Directions:
Place potatoes in large saucepan, cover with water. Bring to a boil over medium-high heat. Reduce to low and simmer until potatoes are tender (about 10 minutes). Drain and cool slightly.

Combine mayonnaise, salt, sugar, pepper and vinegar in a large bowl. Add potatoes, celery, onion and eggs. Combine gently. Chill before serving.

Everyone loved Mom's potato salad! This was a favorite of mom's brothers, Tommy and Billy. This potato salad was at every Boyle gathering.
