2+1/4 cup milk
3 eggs
1 tsp vanilla
1/2 cup sugar
1/4 tsp salt
1/4 nutmeg
unbaked pie shell

Heat milk to scald

Preheat oven to 425º

Beat eggs well then slowly add hot milk stirring constantly & quickly.

Add the rest of the ingredients & stir well then immediately pour into pie shell

Bake 10 -15 minutes at 400º then lower temp to 350º & bake 30 minutes more

Turn stovetop burner on low & put baked pie right on burner to brown crust on the bottom. can take about 15 minutes but watch it very carefully - Mom burned MANY pies this way!!!!!
