Ingredients:  
1lb to 1 1/2 lb cubed lamb.
2 white onions cut into half moons.
Juice of 1 lemon.
1 can chopped tomatoes.
Large bunch of mint chopped. (half at the beginning half at the end. Don't chop it all at the start or it will go black).
1 1/2 pt water.
Veg stock cube. organic low salt if possible not a stock pot.
Salt and pepper to taste.

Directions:
Put all the ingredients into a pot except half the mint.
Bring to a boil and then reduce to a simmer.
Cook for 1 to 1 1/2 hrs until the meat is tender, lid on for the first hour.. (if the lamb is fatty skim the top of the water for the first 20 minutes)
Add the rest of the mint chopped and adjust seasoning. (may need more lemon juice and pepper).

Serve with boiled potatoes, it does not work with rice or pasta.
